Candy Cane Rocky Road
This Christmas Rocky Road recipe is delicious! Full of minty and dark chocolate flavours, it's a festive treat that everyone will love and a great way of using up candy canes too.

- 400 g dark chocolate
- 125 g unsalted butter or margarine
- 45 ml golden syrup
- 1 tsp peppermint essence or flavouring
- 200 g shortbread biscuits broken into pieces
- 50 g mini marshmallows
- 100 g glace cherries
- 50 g candy canes roughly 4 – crushed
To decorate:
- 50 g candy canes roughly 4 – cut into pieces
- Festive sprinkles
Break up the chocolate and put it in a large bowl with the butter, golden syrup and peppermint flavouring.
Melt chocolate mixture using the heatproof bowl over a pan of simmering water on a low heat or in the microwave using short blasts and stirring regularly.
Once melted, leave to cool slightly for 5-10 minutes.
In a separate bowl, mix the biscuit pieces, crushed candy canes, marshmallows and glace cherries.
Pour in the melted chocolate and stir well.
Pour the chocolate mixture into a lined cake tin or brownie pan.
Top with the candy cane pieces and sprinkles.
Put in the fridge to set for at least 4 hours.
Slice and serve.
