Candy Cane Rocky Road

This Christmas Rocky Road recipe is delicious! Full of minty and dark chocolate flavours, it's a festive treat that everyone will love and a great way of using up candy canes too.

Ingredients

  • 400 g dark chocolate
  • 125 g unsalted butter or margarine
  • 45 ml golden syrup
  • 1 tsp peppermint essence or flavouring
  • 200 g shortbread biscuits broken into pieces
  • 50 g mini marshmallows
  • 100 g glace cherries
  • 50 g candy canes roughly 4 – crushed

To decorate:

  • 50 g candy canes roughly 4 – cut into pieces
  • Festive sprinkles

Instructions

  • Break up the chocolate and put it in a large bowl with the butter, golden syrup and peppermint flavouring.
  • Melt chocolate mixture using the heatproof bowl over a pan of simmering water on a low heat or in the microwave using short blasts and stirring regularly.
  • Once melted, leave to cool slightly for 5-10 minutes.
  • In a separate bowl, mix the biscuit pieces, crushed candy canes, marshmallows and glace cherries.
  • Pour in the melted chocolate and stir well.
  • Pour the chocolate mixture into a lined cake tin or brownie pan.
  • Top with the candy cane pieces and sprinkles.
  • Put in the fridge to set for at least 4 hours.
  • Slice and serve.
