Gingerbread Rocky Road
This gingerbread rocky road is a great treat at any time of the year but especially Christmas. Full of gingerbread flavour, it's comforting and sweet. The perfect treat.

Servings: 16 pieces
- 400 g milk chocolate
- 125 g unsalted butter or margarine
- 45 ml golden syrup
- 200 g gingerbread biscuits broken into pieces
- 50 g mini marshmallows
- 100 g glace cherries
To decorate:
- 60 g mini gingerbread men
Break up the chocolate and put it in a large bowl with the butter and golden syrup.
Melt chocolate mixture using the heatproof bowl over a pan of simmering water on a low heat or in the microwave using short blasts and stirring regularly.
Once melted, leave to cool slightly for 5-10 minutes.
In a separate bowl, mix the gingerbread pieces, marshmallows and glace cherries.
Pour in the melted chocolate and stir well.
Pour the chocolate mixture into a lined cake tin or brownie pan and top with the mini gingerbread men
Put in the fridge to set for at least 4 hours.
Slice and serve.
