Mince Pie Rocky Road
This mince pie rocky road is a fantastic festive treat and a great way to use up leftover mince pies. Quick and easy to bake, this no bake treat will be a winner over Christmas and into the New Year.

- 400 g milk chocolate
- 125 g unsalted butter or margarine
- 45 ml golden syrup
- 200 g shortbread biscuits broken into pieces
- 50 g mini marshmallows
- 3 mince pies broken into pieces
- 100 g glace cherries
Break up the chocolate and put it in a large bowl with the butter and golden syrup.
Melt chocolate mixture using the heatproof bowl over a pan of simmering water on a low heat or in the microwave using short blasts and stirring regularly.
Once melted, leave to cool slightly for 5-10 minutes.
In a separate bowl, mix the biscuit pieces, mince pie pieces, marshmallows and glace cherries.
Pour in the melted chocolate and stir well.
Pour the chocolate mixture into a lined cake tin or brownie pan.
Put in the fridge to set for at least 4 hours.
Slice and serve.
