Mince Pie Rocky Road

This mince pie rocky road is a fantastic festive treat and a great way to use up leftover mince pies. Quick and easy to bake, this no bake treat will be a winner over Christmas and into the New Year.

Ingredients

  • 400 g milk chocolate
  • 125 g unsalted butter or margarine
  • 45 ml golden syrup
  • 200 g shortbread biscuits broken into pieces
  • 50 g mini marshmallows
  • 3 mince pies broken into pieces
  • 100 g glace cherries

Instructions

  • Break up the chocolate and put it in a large bowl with the butter and golden syrup.
  • Melt chocolate mixture using the heatproof bowl over a pan of simmering water on a low heat or in the microwave using short blasts and stirring regularly.
  • Once melted, leave to cool slightly for 5-10 minutes.
  • In a separate bowl, mix the biscuit pieces, mince pie pieces, marshmallows and glace cherries.
  • Pour in the melted chocolate and stir well.
  • Pour the chocolate mixture into a lined cake tin or brownie pan.
  • Put in the fridge to set for at least 4 hours.
  • Slice and serve.
