Oaty Fruity Banana Breakfast Muffins

These oaty fruity muffins are a great sweet treat at any time of the day. Easy to make and delicious, we love them for breakfast or as a snack in the afternoons.

Ingredients

  • 100 g butter
  • 175 g sugar
  • 2 eggs
  • 120 g raisins/dried fruit
  • 50 g oats
  • 3 bananas preferably overripe
  • 1 tbsp lemon juice
  • 300 g plain flour
  • 2 tsps baking powder

Instructions

  • Preheat oven 180C/350F/Gas 4 and line muffin tins with muffin cases
  • Cream the butter and sugar before adding the rest of the ingredients and mixing well
  • Divide the mixture between the muffin cases
  • Sprinkle with a few extra oats
  • Bake for 25 minutes or until nicely risen and browned on the top
