Banana Blueberry Fairy Cakes

These blueberry and banana fairy cakes are a wonderful sweet treat and a great way to use up overripe bananas too.

Ingredients

  • 4 eggs
  • 200 g butter or spread
  • 350 g caster sugar
  • 450 g self-raising flour
  • 2 tsp baking powder
  • 3 bananas overripe
  • 150 g blueberries

Instructions

  • Preheat oven 180C/Fan 160C/gas 4
  • Line muffin pans with fairy cake cases
  • Put all the ingredients, aside from the blueberries, in a bowl and mix until combined.
  • Stir in the blueberries.
  • Spoon the banana mixture into the cake cases and bake in the oven for 25-30 minutes until browned.
