Homemade Baked Scotch Eggs Recipe

This is a recipe that reminds me of my childhood – My Mum would make scotch eggs every so often and they were the loveliest treat and something I always looked forward to. These Homemade Baked Scotch Eggs are great served with salad and potatoes or as a ‘junk’ dinner with chips and beans. You could even have them for breakfast!

We’ll always make extra scotch eggs to have enough for lunchboxes or picnics. They are such a treat, so indulgent and yet not that unhealthy really either. Covered in bread crumbs they retain moisture well and keep nicely in an airtight container for a couple of days once cooked.

How to make scotch eggs

I’ve always found scotch eggs to be quite a faff to make so we always make as many as possible in one batch to really make it worth our while. We oven bake scotch eggs at home but you can have them deep fried and they might also work in an airfryer too. If you try that please do report back and let me know how they turned out.

You can use any kind of eggs and any kind of sausage meat for this recipe but if the eggs are quite big you will need to increase the amount of sausage meat you use from the 100g per egg that we use at home.

These scotch eggs aren’t gastro pub quality. They’re not melt in the middle ones you’d get in a fancy restaurant. They’re just honest, home cooked food and perfect for us.

If you’d like to mix this recipe up a little you can always add flavourings to the sausage meat like spices or herbs to vary the flavour. You could even try using ground beef or turkey mince for this too. I just love a traditional scotch egg so we go with a standard pork sausage when we’re making them.

Here’s our pretty traditional scotch egg recipe:

Ingredients

  • 6 eggs
  • 600 g sausage meat
  • breadcrumbs

Instructions

  • Boil 6 eggs until hard boiled – I usually boil them and forget about them for a while! Plunge the hard boiled eggs into cold water if you’re in a rush.
  • Remove the boiled eggs from their shells and preheat oven to 200C/400F/Gas 6
  • Divide the sausage meat into 6 even portions. Flatten one portion in the palm of your hand and wrap an egg in it, smoothing over any joins. Repeat with all the cooked eggs.
  • Pour breadcrumbs onto a plate and roll each covered egg in them until coated. Repeat until each egg is covered.
  • Place eggs on a grill tray (This lets the fat come out of the eggs whilst cooking without the eggs sitting in it) and cook for 40 minutes, turning halfway through until golden brown and crispy.
