I have decided that all Mums should bake. And bake well. This is taking some practice and I think it will take years to perfect! But I think that I have ticked the ‘Mums must make cake’ box, even if the cakes aren’t perfect just yet! One of my favourite cakes is Banana Cake, as it uses up ‘past their best’ bananas and tastes great too. This is a Weight Watchers recipe that I came across and that tastes pretty good considering it’s a low-fat option!
- 75g low fat spread
- 75g caster sugar
- 2 eggs, beaten
- 225g self-raising flour
- 3 bananas, mashed
- 75g raisins
- Preheat oven to 180C/Gas 4. Grease a loaf tin.
- Beat spread and caster sugar together in a bowl until pale and fluffy.
- Gradually beat in the eggs until combined, then fold in the flour, bananas and raisins. Spoon into the tin and bake for 1hr-1hr15 until a skewer comes out clean.
- Cool in the tin for 15 mins then remove from tin and cool on a wire rack.
For anyone following Weight Watchers, this should make 10 slices, each slice is worth 5 ProPoints.
