Chicken Surprise Filler {Bernard Matthews Breadless Lunch}

Although as a family we really love sandwiches it’s lovely to have lunches that don’t involve bread every so often and Bernard Matthews challenged us to come up with a Breadless Lunch – that didn’t contain bread products and used some of their chicken or turkey products.

Chicken Surprise Filler

Our main Breadless Lunches tend to involve jacket potatoes or pasta although salads would be a great bread free lunch but we don’t eat many salads unless it’s as a side dish. For this Loafless Lunch I decided on a Chicken Jacket Potato filler with as much in it as possible – I love this kind of lunch as you can pretty much use anything that you have left in the cupboards or fridge.

Here’s our Chicken Surprise Filler recipe:

Serves: 4 Preparation Time: 10 minutes

Ingredients

  • 400g Bernard Matthews Roast Chicken
  • 200g Sweetcorn
  • 1 pepper, chopped
  • 2 celery sticks, chopped
  • 150g sultanas
  • 200g mayonnaise

Recipe

  • Put all the ingredients in a bowl and mix.

This filler is great in a jacket potato, would work well with pasta and if you can’t quite live without bread it would be a great sandwich filler too! You can use different quantities and experiment with adding different things – halved grapes are great instead of sultanas and you can add a tablespoon or two of curry powder for a coronation chicken style too.

This can be stored in an airtight container for up to three days in the fridge and is best served chilled too – the cold filler goes so well with the steaming hot jacket potato!

    That look lovely on a spud! I wonder if I could substitute the mayo for quark or fromage frais to make it Slimming World friendly?

      I am sure you could! I think fromage frais or low fat natural yogurt would work – not sure what you’re allowed on slimming world! I know WW used to have a recipe with fromage frais, chicken, grapes and curry powder for a coronation chicken filler 🙂 x

    I really want to cut down on how much bread and wheat I eat and this looks delicious! I always forget about jacket potatoes somehow!

    Sounds really rather nice, I love pasta salads and now Monkey has decided he might actually like potato (big thanks to school dinners!) I might add this idea to a jacket potato meal.
