Turkey and Sausage Stew Slow Cooker Recipe

I don’t think there are many food as underrated as a turkey leg. Cheap as chips and the Slow Cooker Turkey and Sausage Stew is a really yummy dinner that the whole family can enjoy. This is a great slow cooker recipe to use leftover turkey and is perfect for freezing. It’s one of our favourite Christmas recipes for the festive season.

We mainly eat this easy stew during the winter but there’s no reason you can’t enjoy it through the warmer months too. It’s a great comfort food, really filling and full of flavour. The combination of turkey, bacon and sausage gives it such a meaty fullness that even the children enjoy. It’s a really simple turkey stew recipe that we never get bored of.

You can add in any leftover vegetables you have and it all cooks together nicelt in the slow cooker or instant pot, making a lovely easy turkey stew or hearty turkey soup depending on how wet you make it!

Can the Turkey and Sausage Stew be used in other ways?

This slow cooker turkey stew can be frozen to be enjoyed at a later date but also can be used as an amazing pie filling. It’s a really versatile leftover turkey stew recipe that can be enjoyed throughout the year – as a pie filling or just as a really hearty stew that the whole family can enjoy.

This turkey leg slow cooker stew recipe is perfect for cooking on a weekday or weekend, getting it on in the crock pot early in the morning and then knowing it will be ready to eat whenever you are. The flavours mature wonderfully whilst cooking and given the amount of vegetables in this turkey slow cooker stew it’s a really hearty one pot meal. You can add potatoes too and everything cooks down nicely over time. Simply serve with crusty bread and enjoy.

So here’s my easy Slow Cooker Turkey and Sausage Stew Recipe – Happy Cooking!

Ingredients

  • Spray oil
  • 1 turkey drumstick
  • 4 smoked streaky bacon rashers diced
  • 200 g sausages – Each cut into 4 pieces
  • 1 onion – sliced
  • 1 leek sliced – green and white parts kept seperate
  • 2 tablespoons plain flour
  • 600 ml chicken stock
  • small bunch of mixed herbs or a sprinkle of dried!
  • 300 g carrots sliced or chunked
  • 2 celery sticks sliced

Instructions

  • Check the drumstick fits in your slow cooker pot. If not, cut the ‘knuckle’ off using a large knife and hitting it with a rolling pin. Be careful.
  • Heat a frying pan and spray with oil. Fry the turkey drumstick, sausages and bacon pieces over medium heat until browned. Transfer to the slow cooker pot.
  • Fry the onion and white part of the leeks until softened, stir in the flour and then add the stock. Add the herbs and bring to the boil.
  • Add the carrots and celery to the slow cooker pot and pour over the onion mixture. Cover and cook on high for 5-6 hours or until the turkey is falling off the bone. Remove the turkey from the pot, discard any bones and break the turkey into pieces before returning to the slow cooker pot along with the green parts of the leeks.
  • Cook for a further 30 mins. Dumplings can be added for the last 30 mins or serve with bread, potatoes or rice.
