Slow Cooker Chicken and Chorizo Casserole Recipe

We love cooking chicken in the slow cooker and they are always some of our favourite family meals. We created this Slow Cooker Chicken and Chorizo Casserole and thought we’d share it with you.

The chicken and chorizo work so well together and give a real depth of flavour. The flavour just intensifies during cooking and you’re left with such a rich main course dish that the whole family will love.

Can you vary this Slow Cooker Chicken Casserole recipe?

You could easily turn this into a chicken chorizo potato slow cooker meal by throwing some potatoes into the mix and enjoying it as a true one pot meal without the need for any sides. Sweet potato would also work really well and it would be ready when you are!

Slow Cooker Chicken and Chorizo Casserole Recipe

We use chicken on the bone for this chicken casserole recipe as it stays nice and moist during cooking but you could use boneless skinless chicken thighs instead if you wanted but chicken breasts do tend to dry out in slow cooker recipes.

This slow cooked chorizo stew is now a firm favourite for our family. It so full of flavour and has all the taste of a traditional Spanish chicken recipe. The chorizo sausage adds a lovely spicy kick to the meal and cooking in the crock pot really helps the flavours to infuse and the meat to soften.

How do you serve this easy chicken casserole?

This is a great one pot slow cooker meal that works well served with crusty bread, rice, mash, roast potatoes or pretty much anything else you feel like! It’s really hearty and full of flavour.

So here’s how we cook our Slow Cooker Chicken and Chorizo Casserole Recipe:

Ingredients

  • 8 chicken drumsticks
  • 300 g chopped chorizo
  • 1 onion sliced
  • 1 tsp ground coriander
  • 1 tsp dried thyme
  • 2 green or red peppers chopped
  • 1 courgette sliced
  • 2 garlic cloves crushed
  • tin of chopped tomatoes
  • 100 ml chicken stock
  • 60 ml sherry

Instructions

  • Fry the chicken and chorizo in a little olive oil on medium heat in a frying pan until browned and put into the slow cooker pot.
  • Fry the onion for a couple of minutes. Add the coriander, thyme, peppers, courgette and garlic and cook for another five minutes. Add the rest of the ingredients and bring to the boil. Add to the slow cooker pot.
  • Cook on low for 8 hours, stirring occasionally.
