Have you heard of Mindful Chef? It’s a fantastic meal box subscription service. if you haven’t tried these kind of things before then they could literally change your life! Mindful Chef have a selection of delicious meals on their website and you can choose which ones are sent to you. You then receive all the ingredients you need to create the meals as well as a recipe card.
Mindful Chef caters for one or two people and you can choose to have between two and four meals delivered. All of their recipes contain no refined carbohydrates and can be ready to eat in just 25 minutes – perfect for a busy lifestyle, especially as it takes the hassle out of deciding what to cook and shopping for ingredients.
Everything arrived well packaged – with the meat products kept inside a clever insulated bag to keep them cool. Everything was portioned out and everything for each meal was contained in a separate brown paper bag so you didn’t even have to sort anything out.
The first meal that we tried was the Green Thai Duck Curry which was lovely. We had a duck breast each and the meal was bulked out with beautifully cooked vegetables – we don’t often have baby corn and mange tout so this was quite a treat. The flavours were fantastic and it was a really filling dish – all for under 600 calories!
The next meal was pork meatballs with sautéed parsnips and kale. I had never thought to have parsnips instead of our usual portion of carbs and it made a really nice change. I’ve also never had meatballs without a sauce but these ones with their smokey paprika flavours were perfect just as they were. I was impressed that the meal took just 25 minutes to cook and was under 450 calories!
Mindful Chef is a great way to eat a health, balanced diet, try new foods and eat more of the right things. The recipe cards mean that you can make the recipe again at home and it has already spurred us on to try new things as we had never really thought to cook duck at home before.
All of the ingredients are organic and sourced from Mindful Chef’s own farms n Devon. The ingredients were also great quality and the recipe cards were easy to follow. Mindful Chef also offer a plant based box is you are vegetarian or just trying to cut down on meat in your diet.
It would be great if Mindful Chef could incorporate a family orientated box into their range – or at least cater for more than two people with the meals. Because it is limited to two people, and we prefer to eat as a family – and eat the same things – we would probably only buy Mindful Chef again as a treat – those times when you have a date night at home and want to cook something really different or when the children were away with the grandparents for the weekend. However, if you’re single, in a couple without children or are happy to eat after the kids are in bed or eat different things to the children then Mindful Chef is fantastic and I wouldn’t hesitate to recommend it.
