Mincemeat Middle Cupcakes Recipe

We love finding new ways to use up leftover mincemeat without making endless batches of mince pies! We decided to create mincemeat middle cupcakes as a twist on a jammy middle cupcake recipe and they’ve turned into something lovely to enjoy baking with the children over the festive season.

Why do we love Mincemeat Middle Cupcakes?

These easy mince pie cupcakes have a lovely mincemeat centre, just like a mince pie but with that wonderful cake consistency instead of pastry. They rise well in the muffin tins and are finished simply with a dusting of icing sugar.

You could use a piping bag to ice the tops with buttercream if you wanted which we do if we’re making them for guests over Christmas and want to be a little bit fancy!

We love creating new bakes with all those festive flavours and simple gooey middle mincemeat muffins have turned into something the whole family love and I know we’ll be making them throughout December and probably well into the new year through January too!

Mincemeat Middle Cupcakes Recipe

What equipment do you need to make these little festive cupcakes?

You will no doubt have most of the equipment you need for this mincemeat cupcakes recipe at home already but, in case it helps, here are the things we use to bake these cakes at home:

These are pretty much staples for baking in any home kitchen and once you have them you won’t need to replace them often.

So here’s our Mincemeat Middle Cupcakes recipe:

Ingredients

  • 280g self raising flour
  • 175g caster sugar
  • 2 eggs
  • 1/2 tsp vanilla extract
  • 75g melted butter or margarine
  • 80g mincemeat
  • icing sugar

Recipe

  • Preheat the oven to 200C/400F/Gas 6
  • Line a muffin tray with cupcake cases
  • Put the flour, sugar, eggs, vanilla and butter in a bowl and mix well.
  • Share half the mixture between the cupcake cases
  • Put a teaspoon of mincemeat on top of the mixture in the centre of each cupcake case
  • Share the remaining cake mix batter between each of the cupcake cases, covering the mincemeat
  • Bake for 20 minutes until risen and golden brown
  • Leave to cool completely before dusting with icing sugar
