Banana Blueberry Fairy Cakes Recipe

I am always looking for new ways to use up over ripe bananas. We have so many muffin and cupcake recipes but sometimes you just need little fairy cakes as a sweet treat. These fairy cakes are so simple to make and the perfect thing for the children to have as an afternoon snack without spoiling their dinner – or even for breakfast or dessert.

Banana Blueberry Fairy Cakes

Fairy cakes are a great alternative to muffins or cupcakes and the kids love them. We use a standard size muffin tin for these cute little bakes but with smaller fairy cake cases – you can get paper cases in so many sizes and styles now. They are so easy to make, the children really enjoy baking them and they have a really lovely flavour too. You really can’t beat cakes with fresh blueberries in!

Can you vary this banana fairy cakes recipe?

I know a lot of people add vanilla to plain cake recipes but I don’t think this one really needs it. It gets all the flavour it needs from the fruit. Having said that, if you don’t have fresh blueberries you could use dried fruit instead for an all year round flavour that the whole family will still enjoy.

We often eat these little baby blueberry cupcakes still warm from the oven or give them just a little dusting of icing sugar before we dive in. You could ice them if you wanted to but they really are lovely just as they are. They’re the perfect addition to any party buffet or afternoon tea spread.

Banana Blueberry Fairy Cakes

Here’s our easy recipe for Banana Blueberry Fairy Cakes:

Makes: 30 fairy cakes or 20 bigger cakes.

Ingredients

  • 4 eggs
  • 200 g butter/spread
  • 350 g caster sugar
  • 450 g  self-raising flour
  • 2 tsp baking powder
  • 3 overripe bananas
  • 150g blueberries

Instructions

  • Preheat oven 180C/Fan 160C/gas 4
  • Line muffin pans with fairy cake cases
  • Put all the ingredients, aside from the blueberries, in a mixing bowl and mix until combined.
  • Stir in the blueberries.
  • Spoon the banana mixture into the cake cases and bake in the oven for 25-30 minutes until browned.
